i have posted quite a few rava or semolina based dessert recipes in my blog. each has its own uniqueness as each recipe differs in the way it is made. particularly in north india, the same (almost same) recipe is known as sooji ka halwa or suji halwa. the recipe is denser and does not have any saffron colour to it. further in south india, there are many variations to the sheera recipe. the recipe i have posted is the basic one, but you may add choice of tropical fruit to make it versatile. for instance slices of pineapple, banana, orange and even seasonal mango slices are added to make it as pudding. however in this recipe, i have limited to the basic version without any adulteration.

anyway, some of the tips, suggestions and variations for a moist and rich rava sheera recipe. firstly, always use coarse or bombay rava for this dessert. do not ever attempt the recipe with fine semolina or bansi rava as it may end up as a mess. secondly, if you are planning to add any choice of fruit, you are more than welcome to do so. however you may have to control the amount of sugar added to it. perhaps reducing the quantity accordingly would be a better option. lastly, i have added yellow food colour to get a bright yellow colour. you can alternatively add kesar or turmeric to get the golden bright saffron colour.

how to make sheera with step by step photo:
- firstly, in a pan add 2 tbsp ghee and roast 7 cashew, 2 tbsp raisins on low flame.
- once it turns golden brown, keep aside.
- in the remaining ghee add ½ cup rava and roast for 5 minutes on low flame. keep aside.
- in a large kadai get 1½ cup water to a rolling boil.
- add roasted rava slowly, stirring continuously.
- the rava will absorb all the water and turns a lump-free mixture.
- now add ½ cup sugar and continue to stir.
- sugar dissolves completely and gets absorbed by rava.
- further add ¼ cup ghee and 3 drops yellow food colour. adding food colour is completely optional.
- now mix well making sure everything is well combined.
- cover and simmer for 5 minutes making sure rava is cooked completely.
- further add roasted cashew, raisins and ½ tsp cardamom powder.
- mix well making sure everything is well combined.
- finally, enjoy sheera with khara bath or serve as prasada.
notes:
- firstly, roasting rava helps to prevent from lump forming.
- also, you can add milk in place of water to make rich sheera.
- furthermore, adjust the amount of sweetness to your preference.
- finally, sheera recipe tastes great when served warm and soft.
