Gordon Ramsay shares secret to making ‘incredibly delicious’ chicken wings – and the recipe’s easy

Gordon Ramsay has shared his secret to making “incredibly delicious” chicken wings in lockdown.

The Hell’s Kitchen star revealed the recipe in a recent video posted on his YouTube channel.

The tutorial was uploaded earlier this month and already has around two million views on the site.

In the new video, the experienced TV chef runs through his own method for the homemade dish.

He said that his recipe will help you make “the most amazing” chicken wings – whether mild or spicy.

So what’s the “secret” to his recipe? Here’s the technique Gordon Ramsay recommends in the video.

Before you get cooking his chicken wings, you’ll need to make sure you have all the ingredients ready.

It’s likely you’ll have some of the listed items already and the others are easily found in supermarkets.

As stated in Gordon’s recipe, anyone wanting to cook the dish will need the following things:

  • 2 pounds chicken wings (lollipopped)
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon kosher salt
  • 2 tablespoons canola oil
  • A few knobs unsalted butter
  • Freshly ground black pepper
  • Hot sauce of choice

And whilst many will be hoping for spicy wings, the recipe allows for you to make them however you like.

The tutorial explains that you can choose to make them as hot or as mild as you want – the choice is yours.

The recipe

The recipe suggests preheating the oven to 375˚F (190˚C) and then you’re ready to get started on the dish.

First place the chicken wings in a large bowl and “nicely dust” them with some garlic powder as well as salt.

You’ll want to add “a bit of heat” with a spoonful of smoke paprika and then mix the ingredients together.

“That literally just starts to give these wings a lovely coat and be generous,” the renowned chef encouraged.

A large oven-proof saute pan should then be placed over medium-high heat with a tablespoon of oil added.

Let this heat for a moment before adding the seasoning wings. Gordan said the “secret” to this stage of the cooking is to “give them a really nice sear”, suggesting introducing some butter.

He explained that this ingredient will cool down the wings but also “adds richness and flavour” to the dish.

You’ll want to “roll [the wings] round” the pan and should notice them darkening and looking caramelised.

Gordon warned: “The flesh [will] start to move down the bone and it almost becomes like a lollipop – which is great for picking up. Don’t worry about that flesh and skin sliding down.”

Toss the wings gently in the pan and add black pepper, with the TV chef explaining that it’s better to add the seasoning at this stage – rather than at the very start, when salt and other ingredients were added.

He said: “I love sauteing [the] wings when they’re nice and hot [as] they take the pepper so much easier.”

Once most of the edges become crispy and the pan starts to froth, “it tells you that it’s time for the oven”.

Place the pan in the oven and bake for 15 minutes until the wings are golden, crispy and cooked through.

After this step, you should put the wings in a large bowl and “this is where the magics starts”, Gordon said.

You’ll need to focus on glazing the chicken and should start by taking a teaspoon of the leftover pan juice.

Next add your hot sauce of choice with the chef recommending giving the bottle a “really good shake” first.

A few knobs of butter can be placed in the bowl after this and you should then toss and let everything melt.

“Give them a really nice mix and what’s happening now is the butter’s melting and they get really nice and glazed. You don’t want too much hot sauce because you can always go back for seconds,” said Gordon.

The Hell’s Kitchen star revealed that “the secret is to beautifully mix them up” to produce a delicious glaze.

It’s then time to tuck in! If you followed the recipe, you’ll have made “the most amazing, hot, spicy wings”, according to the chef.
