  1. Over medium heat, drizzle olive oil into the skillet. Cook the onion until it’s transparent, then add the bell peppers and garlic.
  2. Mix in the tomato, bay leaf, paprika, saffron, salt, and pepper. Cook for 5 minutes while stirring. Add the white wine and let it cook for 10 minutes. Put salt on it if it tastes bland.
  3. Throw in some chicken, 2 tablespoons of chopped parsley, and rice. Cook for 1 minute.
  4. Slowly pour the broth around the pan and jiggle it to distribute it evenly over the rice. (Do not combine further!).
  5. Start a boil with the mixture. Lower the temperature to medium-low. Once or twice throughout cooking, give the pan a light shake back and forth.
  6. After 15-18 minutes (uncovered), add the shrimp, mussels, and calamari, sprinkle with peas, and simmer for 5 more minutes without stirring.
  7. Keep an eye on it until the liquid has been absorbed and the rice on top is almost done cooking.
  8. Take the pan off the burner and cover it with a lid or aluminum foil. Cover with a dish towel and set aside for 10 minutes.
  9. Put lemon slices and fresh parsley on top. Serve.
