2 ingredient root beer cake is a quick dessert you can throw together in no time at all! Just grab your favorite brand of soda, boxed cake mix and top with ice cream!

• We started this experiment with our 2 ingredient strawberry cake that came out so moist we just had to do it again!!

Soda cake or cupcakes are lower in calories, dairy free and egg free too. How can this be? I dunno it just works y’all. 😉

2 Ingredient Soda Cake

You can use boxed or this homemade chocolate cake mix, totally up to you. If you love batch cooking you might want to try this. Then you can divide it up into baggies and have it on hand for many months.

It is a cheaper way to go and saves you trips to the store when you want a quick easy dessert. This is what you’re going to need:

Root Beer Float Cake

1. Large bowl
2. Box of cake mix, your choice as far as that goes but we went with chocolate because why not?
3. 1.5 cups of Root beer or really you can use any sort of soda.
4. This bundt pan

That is really it. I mean you’ll probably want some vanilla ice cream and/or whipped cream on top of each piece when you serve it but it’s pretty easy. Alternatively you can whisk together powdered sugar and water for a simple glaze.

What ingredients make a cake more moist?

If it just isn’t coming out super tender for you, try adding 2 extra tablespoons of oil into your mixture. That should do the trick. Fewer eggs tend to produce a more dense and less fluffy creation too.

You just do, and it works! This trick is great for those who need an egg free cake recipe that tastes amazing. NO need for any of those if you just combine what’s in that clear baggie and some of your favorite soda pop.

Root Beer Bundt Cake

I used a bundt pan because I think that it just looks so pretty when it is done. Yes you could make this batter homemade, but why?

If you insist on doing it all yourself then you could use a chocolate cake recipe and use root beer extract, or add root beer flavored soda instead of water.

Just do the same thing incorporating everything into a mixing bowl, or use a stand mixer to make your cake batter. Pour into a cake pan and allow to cool completely before slicing. This will make the pieces come out easier.

I know people usually use a toothpick and say when the center comes out clean it is done, I like a bit less time. Instead I say to touch lightly in the center. When it springs back it is done.

If you really need to do the “toothpick thing” then take out once it comes out mostly clean with some crumbs on it. That means it will still be really moist inside. If you over-bake it just gets crumbly and dry.

Yep!! We have used this idea over and over again, it doesn’t matter what combination of the 2 you use. All of the ingredients needed to rise like baking powder etc..are in the boxed mix. All you’re missing is the moisture.
