What is the Toddy Cold Brew System?

The Toddy Cold Brew System was developed for the purpose of unlocking the underlying flavours that exist within different coffee beans and removing the acidity, producing a superior coffee brew. The system was developed by the chemical engineer, Todd Simpson, which is where the ‘Toddy’ gets its’ seemingly odd name.

The Cornell graduate developed and patented the Toddy Cold Brew System in 1964, which was designed to brew coffee with 67% less acidity than hot brew alternatives. Having a less acidic brew has a variety of advantages for coffee lovers: it unlocks more of the underlying tones in the beans to create a more flavoursome brew; it removes bitter flavours from the coffee so it can be enjoyed both hot and cold, and it is easier on more sensitive stomachs.

Basically, the concept is that time replaces heat as the brewing method, proving that good things truly do come to those who wait… approximately 12 hours. The Toddy Cold Brew System extracts the delicious flavour compounds from the roasted coffee while bypassing other acidic compounds that can only be extracted at high temperatures, such as bitter oils and fatty acids. This creates a brew that is smooth, sweet and full of flavour.

Toddy cold brew coffee can be enjoyed straight “on-the-rocks” style, while some drinkers prefer to top their cold brew coffee with filtered water or milk. Enjoy your cold brew hot or cold, or try adding a dash to recipes to create exquisite coffee creations.

8-12 hours

Toddy Cold Brew Ratio:

There are two good options for your coffee to water ratio.

1.250g ground coffee to 1 litre of water.

2.340g ground coffee to 1.6 litres of water.

Step 1: Push the rubber stopper into the hole on the base of the Toddy bucket, then wet your Toddy filter and place inside at the bottom of the bucket.

Step 2: Measure out your coffee and water. Pour 200ml of water into the Toddy and add approximately 50g of ground coffee. Let this infuse for around 1 minute.

Step 3: Add remaining ground coffee and cold water, then gently fold the ground coffee into the water with a wooden stirrer, ensuring all the grind is wet.

VERY IMPORTANT– Don’t stir too much or your coffee will be cloudy and slightly bitter. Place a cover over the toddy and leave it to brew for 8-12hrs (depending on personal taste). We recommend the longer brew time for those who enjoy drinking strong coffee. Leaving it overnight is fine.

Step 4: Once it has finished steeping, remove the plug from the base of the Toddy and place on top of the glass decanter and leave to drain. This will take up to 1 hour.

Step 5: Keep your coffee concentrate in the fridge and enjoy over ice, and add milk or chilled water for an iced coffee. You can also add the Toddy cold brew coffee to recipes or make as a hot coffee. The most wonderful thing about cold brew coffee, it’s totally flexible for brewers to make their own recipes and creations.
