If there is one vegetable that’s synonymous with October, it’s the pumpkin. Whether it’s carved or decorated, Halloween just wouldn’t be the same without this humble orange veg. And it’s because of this that you’ll soon find it everywhere.

But it’s so much more than a jack-o’-lantern and, while it’s in all the supermarkets and in season, there’s no better time to enjoy its deliciousness. Pumpkin is an incredibly versatile vegetable to cook with – it can be boiled, steamed or roasted until wonderfully soft and caramelised. It’s also a great source of vitamin C, which our bodies need for immune health, teeth and gum health among other things. Read on for some delicious pumpkin recipes.

Not sure how to prep a pumpkin? It’s super easy:

  2. Carefully cut the pumpkin in half down the middle with a large, sharp knife
  3. Scoop out the seeds and stringy bits with a large spoon (or your hands).
  4. Slice the pumpkin into chunks.
