- 1 cup chicken stock (buy here)
- 2 tablespoons butter

- 1 clove

You should remove the pork from the refrigerator at least 5 minutes before cooking it and allow it to come to room temperature, so it will soften more.
Season pork twice: once before cooking and once during cooking.
PORK CHOPS
- Season the pork pieces with salt and pepper. Make sure it covers the entire surface of the pork. Leave it for 5 minutes. The fat attached to the pork will make the pork chop moist when cooked.
- Heat a pan. Add 1 teaspoon of olive oil.
- Put the pork in the pan. After 90 seconds, turn the pork over and cook for another 90 seconds.
- Lift and tilt the pork to a standing position, rendering the fat all around. The more rendered fat, the tastier the pork will be. 8 ounces of pork usually take 7 to 8 minutes to cook.
- When the color of the pork has changed, add a couple of knobs of butter.
- Baste the pork with butter in the pan. Basting the pork will add texture and a nice taste to the pork, as well as keeping it moist. After 3 minutes, turn the pork over, do the same thing.
- Take the pork from the pan, place it on a plate, and drizzle it with some of the remaining butter in the pan. The pork is not yet cooked at this point, but will continue to cook while it rests.

PORK CHOPS SAUCE
- Heat the pan, add 1 tablespoon of olive oil
- Add some minced garlic and chopped shallots to the mix. Sauté until it turns golden.
- Pour in the Calvados brandy, then tilt the pan slightly until a slight flame appears in the pan. NOTE : If you are inexperienced doing this technique, you have to be careful at this step, keeping your hands and face off the top of the pan.
- Reduce the alcohol, then add the chicken stock. Bring to a boil, cook for 2 minutes. Allow it to reduce by half.
- Stir in the cream, which will give the sauce a richer taste and make it thicker. Bring it to a boil.
- Add 1 teaspoon of Dijon mustard and 1 teaspoon of grain mustard. Then whisk gently until well blended.
- Lift up the pork, then put it back in. On low heat, let it cook in the sauce for 3-4 minutes.
CARAMELIZED APPLE
- Peel the apple, core it, and slice it medium.
- Season the apple slices with salt and pepper on both sides.
- Heat a pan. Add 1 tablespoon brown sugar, melted; no need to stir to prevent crystallization.
- After the color change, add butter, then add apples, then star anise, cinnamon, and cloves.
- Once the bottom side of the apples is browned, add the butter, then turn the apples over.
- Pour in the Calvados brandy, then tilt the pan until a slight flame appears in the pan. NOTE : If you are inexperienced doing this technique, you have to be careful at this step, keeping your hands and face off the top of the pan.
- After the caramel is formed, add a little more butter and almost let the apple stew.
- Cook for a while, then the caramelized apple and pork chops are ready to be served.
