If you’ve never had a cabbage roll you might be wondering why this recipe is “unstuffed”. Cabbage rolls are typically cabbage leaves filled with rice, seasonings, and ground meat in a red sauce.
Normally you’d have to spend hours scooping, filling, and rolling the cabbage leaves just perfectly so they don’t fall apart or spill in the slow cooker.

I wouldn’t consider this a soup necessarily. With a bit more liquid you could certainly make it into a soup though!
If you want to make a cabbage soup this recipe would make a good start. Just add more broth and make make the cabbage smaller and you’ll be all set!

What do I need to make unstuffed cabbage rolls?
You will find all the staples of cabbage rolls on this list. That’s because we’re not reinventing the wheel here. We’re taking something good and making it easier!
The slow cooker does all the hard work for you and since there’s no filling or rolling involved you won’t have to mess with half cooked cabbage leaves or the messy process of filling them and rolling them perfectly.
To make unstuffed cabbage rolls you’ll need ground beef, minced garlic, cabbage, onions, and canned tomatoes. We will also use condensed tomato soup, water, and rice if you plan to serve your finished cabbage rolls over rice!
If you want to serve them over noodles or something else you can just omit the rice from this recipe or add it in at the end and include it however you want to serve your finished recipe!
How to make unstuffed cabbage rolls in the Crockpot:
Place the ground beef in a skillet. Brown for about 3 to 5 minutes then add the chopped onion and minced garlic to the skillet. Continue to brown the meat until no longer pink or internal temperature of 160 degrees. Drain the ground beef.

Cut the cabbage in quarters, remove the core and rinse thoroughly. Cut the cabbage into large pieces and pat dry.
Spray a large crockpot with non-stick spray or use a liner.
Place half of the cabbage pieces into the bottom of a crock pot. Add half the cooked ground beef mixture. Then pour the undrained diced tomatoes into the crockpot.
Add the remaining cabbage pieces to the crock pot and spread the remaining ground beef over the cabbage.
In a small bowl combine the two cans of condensed tomato soup and 1 cup of water. Pour the soup mixture into the crockpot.
Place the lid on the crock pot and cook on high for 4 hours or low for 6 to 8 hours or until the cabbage is tender. Just before serving stir in the cooked white rice and heat through.
