Bacon Cheeseburger Meatloaf is a fabulous Paula Deen meatloaf recipe. It tastes just like it’s depicted-a bacon cheeseburger! No kidding. This meatloaf is filled with lots of bacon and cheese, then it’s glazed with a ketchup and mustard sauce, followed by French’s Fried Onions stacked on top. Heavenly does not begin to describe this awesome meatloaf recipe.

It sounds like something you’d find at a country diner or greasy spoon. I assure you, it tastes absolutely spectacular, especially if you love bacon cheeseburgers! I thought this meatloaf was mouthwatering and sumptuous when I made it a couple of weeks ago for company. The flavors were perfect, the texture was wonderful with crunch from the onions as well as the bacon. Seriously, it tasted like eating a bacon cheeseburger with onion rings on top. It was awesome.

I don’t eat foods like this much anymore. I’ve been sitting on this recipe for about three to four years. Our pastor’s wife at Hillcrest Baptist Church watched Paula Deen making this recipe on television. She gave me a copy of the recipe and I’ve been wanting to make it ever since. But it has so many things I rarely eat anymore, I waited for the proper time to make it. That proper time was when we served it to a houseful of company! That way I knew we wouldn’t be eating lots of leftovers that we couldn’t keep our hands out of! (And, rack up 5 pounds in a matter of days!)
I’m not a cook who’s afraid to try out new recipes for company. I usually try out at least one new recipe (if not more) with company every time we entertain. I figured with the Paula Deen name it couldn’t be bad-and it wasn’t. This meatloaf was one of the best I’ve ever eaten. But it is high calorie, fattening, and not healthy-so let me get that word out right up front. But every now and then we allow ourselves to indulge-and indulge we did! I’m glad we did because it was absolutely delightful.
Our guests confirmed what I thought about the meatloaf-everyone loved it. Even one of the children raved over the meatloaf and said it was the best he’d ever eaten! Because we had company I made one-and-a-half times the normal recipe, though I doubled the meat ingredient. There were a few things I changed, too.
My husband can’t stand cooked mayonnaise in a recipe so I substituted sour cream instead. When Bev gave me the recipe she told me that Paula revealed a few secrets at the time of the video that were not written in the actual recipe. I’ve incorporated those secrets into this recipe.
I have to admit, this was the first time I’ve ever toasted bread crumbs for a recipe before. That provided a more savory rich depth to the meatloaf that it wouldn’t have with just plain bread crumbs. I also increased the amount of the ketchup-mustard sauce because it seemed a little skimpy. Even with increasing those amounts the sauce will not completely cover the meatloaf.
I don’t usually serve meatloaf to company because a lot of people don’t like it. However, I inquired beforehand of the two families we were having over. Both were delighted that I was going to make it. I don’t think any of us had ever made a Paula Deen recipe that failed! Her name is synonymous with good food!
Bacon Cheeseburger Meatloaf is incredibly delicious and I highly recommend you try it if you’re not worried about calories. Of course, if you serve it to a houseful of people and limit yourself to one slice that’s another alternative. 🙂 If you’re looking for a way to spiff up your meatloaf you should certainly consider making this version sometime. But don’t get on the scale immediately afterward! Prepare yourself for a spectacular culinary delight with this wonderful meatloaf. And don’t be surprised when you have NO leftovers. 🙁
I initially posted this recipe in October 2013 after making the recipe for company. I recently remade this meatloaf (May 2018) for our weekly Friday night care group. I had asked those attending if they would eat meatloaf and all said yes. Well, this turned out terrific again. I didn’t toast the bread crumbs this time before adding to the meatloaf. But other than that, I made the recipe very similarly to the first time. I doubled the recipe for our group and that’s why the meatloaf looks so long! Enjoy.

Bacon Cheeseburger Meatloaf tastes just like eating a bacon cheeseburger with onion rings on top!
If you look closely at the meat you will see a piece of bread on the bottom. One of the secrets Paula Deen shared during the episode that Bev watched was to put pieces of sandwich bread under the meatloaf.
I’m assuming that’s to sop up extra grease that’s drained from the meat. Everyone was amazed at how little grease was in the baking dish. The sourdough bread I used did the trick.

I served Bacon Cheeseburger Meatloaf with Baked Parmesan Tomatoes and Shoepeg Corn Dish.
Here’s what I did.
I used these ingredients. I also made a double batch of the recipe.
Place ground beef in a mixing bowl. Add shredded sharp cheddar cheese and Italian-style bread crumbs. (You can toast the crumbs if you prefer).
Add eggs, crisp-fried bacon broken into small pieces, sour cream (or mayonnaise). I didn’t bother trying to slim this recipe down with Greek yogurt since it already has so many high calorie ingredients you can’t take out of the recipe.
Add Worcestershire sauce, salt and pepper.
Mix with hands to combine.
In a small mixing bowl add ketchup, mustard and brown sugar.
Stir ingredients to combine.
Add 1/4 cup ketchup mixture to beef mixture and combine. Set remaining sauce aside.
Spray a large 9×13″ or 10×15″ glass baking dish with cooking spray. Place pieces of sourdough bread in the center of the dish to absorb excess grease from the meat while cooking.
Shape beef mixture into a loaf over top of the bread in the baking dish. Try to seal edges well so the cheese doesn’t leak out all over the pan. Make sure you don’t make the meatloaf really high. Spread it out over the dish so it cooks more quickly.
You can tell that I stretched the meat out over the width of the dish rather than stacking it too high. It cooks a lot more quickly that way. Plus, there’s nothing worse than cutting into a meatloaf and finding it still pink in the center.
Normally the recipe calls for the sauce to be spread over the meatloaf at the beginning. Because my meatloaf was so big, I decided to try to get it cooked first so the sauce wouldn’t burn or over-cook.
Bake at 350 for about 45 minutes for a regular sized meatloaf and an hour for the double-sized meatloaf. You will notice there’s hardly any grease in the baking dish.

Pour remaining ketchup mixture over top of the meatloaf. Bake about 10 minutes for regular meatloaf and 30 minutes more for a double meatloaf.
Top with French Fried Onions and bake about 10-15 minutes more until onions are crispy.
Slice down and serve. You can see the bacon pieces peeking out of the meatloaf in the center. Yum.

While Bacon Cheeseburger Meatloaf is high in calories it’s also very high in taste. This meatloaf is succulent and mouthwatering. We loved the addition of bacon, cheese and French fried onions to meatloaf. It was exceptionally good.
